Living on an island, believe it or not – we have some wonderful and exotic food.  Every once in awhile, I get a craving for some “down home” food.  Not to worry, Tommy, the owner of Paradise Cafe in downtown Christiansted, can deliver.  Every Saturday for about 15 years, he’s been serving up corned beef and cabbage with perfectly cooked potatoes and carrots.   I mean it is lip smacking good, and only $12 a plate.   I treated myself this weekend – and when they served the plate, thought I would have leftovers to have for another meal.  Wrong.  Ate every bit.  SOOOO good!  One of my favorite things, for sure!   And of course, where would we be without southern Fried Chicken?  Blue Water Terrace serves up some truly down home fried chicken and mashed taters….mouth watering good!  And just this morning, I had chicken waffles wrapped in bacon, smothered with blueberry maple syrup.  And this was at our local gas station (Ziggy’s).  Thanks Aaron!   NOW do you understand why I am chubby???  No such thing as discipline with these treats to tempt me!!  St Croix has some of the best chefs and best food around!!
